Easy Kale Salad

Kale is one of my favorite greens. Actually, it IS my favorite green! I love it in salads, dehydrated, in smoothies - even plain. Rich in nutrients like beta carotene, vitamin K, vitamin C, lutein, antioxidants, and calcium, kale is a nutritional powerhouse and is considered one of the top super foods. This simple salad combines kale with another amazing food - nutritional yeast. The name does not do this little fungus justice. Made from a culture of beet molasses and sugarcane, nutritional yeast is a complete protein and is a good source of B12. Plus, it's just plain delicious!

Ingredients
  • one large bunch of kale
  • extra-virgin olive oil
  • nutritional yeast (approx. 1/4 cup - more to taste)
  • sea salt (optional)
Directions
  1. Wash kale, remove greens from stem, and tear into bite-sized pieces
  2. Place kale in a large bowl and drizzle with olive oil (I never measure this - you don't need too much olive oil so start with less and add more if needed; approx. 1 - 2 Tbsp.)
  3. Toss the kale to coat evenly with olive oil
  4. Add nutritional yeast
  5. With hands, massage and toss kale gently to coat the leaves with the nutritional yeast
  6. Add salt to taste
NOTE: You can use this same recipe to make delicious dehydrated kale chips. After preparing as written, simply spread the kale onto dehydrator trays and dehydrate at 105 degrees for about 6-8 hours (check to be sure the kale is entirely dehydrated). The only problem I have with dehydrated kale is that I almost always eat the entire batch right off of the trays!
