Breakfast of "Chia"mpions

I love chia seeds. They are fun to eat, versatile, and so good for you. They are high in fiber, full of protein, have more omega-3 fatty acid than salmon, and more calcium than low-fat milk. You can reap the benefits of chia by simple adding a tablespoon or two into drinks, soy yogurt, smoothies, etc. Or you can make a Breakfast of "Chia"-mpions (corny, I know).  The following recipe makes enough to serve two kids, or one hungry adult.

Ingredients
  • 1 apple
  • 2 medjool dates (pits removed)
  • 1/2 cup water
  • 3 Tbsp. chia seeds
  • 2 Tbsp. raisins
  • 1 tsp. raw honey
  • dash of ground cinnamon
 Directions
  1. Core and slice the apple.  Place apple slices and dates into the small bowl of your food processor and pulse until they are both finely chopped. (It is possible to do this by hand if you prefer.) 
  2. Place the apple and date mixture into a bowl. Add the 1/2 cup of water and the chia seeds. Mix well.
  3. Stir in the raisins, honey, and cinnamon.
  4. Let sit for 5 minutes to allow the chia seeds to absorb some liquid.
  5. Divide into two serving bowls.
